Tomato and Cucumber Pico de Gallo

This refreshing pico de gallo is made with fresh tomatoes, cucumbers, onions, and cilantro. It's perfect as a topping for tacos, salads, or as a dip with tortilla chips.

Ingredients

  • Jalapeno pepper - 1 small, seeded and finely chopped (optional)
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Red onion - 1/2 small, finely chopped
  • Cucumber - 1 large, diced
  • Tomatoes - 4 medium, diced

Instructions

  1. In a large bowl, combine the diced tomatoes, cucumber, red onion, and cilantro.
  2. Add the lime juice, salt, black pepper, and jalapeno pepper (if using).
  3. Toss everything together until well combined.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
