Tomato and Cucumber Ceviche

This refreshing tomato and cucumber ceviche is a light and flavorful dish perfect for summer.

Ingredients

  • Tortilla chips - For serving
  • Avocado - 1, diced (optional)
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Jalapeno - 1 small, seeded and minced
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 2 tablespoons
  • Red onion - 1/2 small, thinly sliced
  • Cucumber - 1 large, diced
  • Tomatoes - 4 medium, diced

Instructions

  1. In a large bowl, combine the diced tomatoes, cucumber, red onion, lime juice, cilantro, jalapeno, salt, and black pepper.
  2. Toss gently to combine and let it sit for 10 minutes to allow the flavors to meld together.
  3. If desired, add diced avocado and gently toss to combine.
  4. Serve the ceviche chilled with tortilla chips on the side.
