Tomato and Cucumber Curry

This tomato and cucumber curry is a flavorful and refreshing dish that combines the sweetness of tomatoes with the crunchiness of cucumbers.

Ingredients

  • Fresh cilantro - For garnish
  • Oil - 2 tablespoons
  • Salt - To taste
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chili - 1, finely chopped
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Cucumbers - 2 medium, peeled and diced
  • Tomatoes - 4 medium, chopped

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Add minced garlic, grated ginger, and green chili. Sauté for another minute.
  4. Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well.
  5. Add the chopped tomatoes and cook until they become soft and mushy.
  6. Add the diced cucumbers and cook for 5 minutes, until they are slightly tender.
  7. Garnish with fresh cilantro and serve hot with rice or roti.
