Potato Curry

This flavorful potato curry is made with a blend of spices, potatoes, and aromatic ingredients.

Ingredients

  • Fresh cilantro - For garnish
  • Vegetable oil - 2 tablespoons
  • Salt - To taste
  • Garam masala - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chili - 1, finely chopped
  • Tomatoes - 2 medium, chopped
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 large, finely chopped
  • Potatoes - 4 medium, peeled and cubed

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion and cook until golden brown.
  3. Add the minced garlic, grated ginger, and green chili. Cook for another minute.
  4. Add the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Stir well to combine.
  5. Add the chopped tomatoes and cook until they soften.
  6. Add the cubed potatoes and mix well to coat them with the spices.
  7. Cover the pan and cook for about 15-20 minutes, or until the potatoes are tender.
  8. Sprinkle garam masala over the cooked potatoes and mix gently.
  9. Garnish with fresh cilantro and serve hot with rice or naan bread.
