Spinach Curry

This flavorful spinach curry is made with fresh spinach, aromatic spices, and creamy coconut milk.

Ingredients

  • Fresh cilantro - For garnish
  • Oil - 2 tablespoons
  • Salt - To taste
  • Coconut milk - 1 cup
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chili - 1, finely chopped
  • Tomatoes - 2 medium, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 large, finely chopped
  • Spinach - 500 grams

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add the chopped onion and sauté until golden brown.
  3. Add minced garlic, grated ginger, and green chili. Sauté for another minute.
  4. Add the chopped tomatoes and cook until they become soft and mushy.
  5. Add turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well.
  6. Add the spinach leaves and cook until they wilt down.
  7. Transfer the mixture to a blender and blend until smooth.
  8. Return the blended mixture to the pan and add coconut milk. Stir well.
  9. Season with salt and let the curry simmer for 5-7 minutes.
  10. Garnish with fresh cilantro and serve hot with rice or naan bread.
