Tom Yum Soup

Tom Yum Soup is a spicy and sour Thai soup made with fragrant herbs, shrimp, mushrooms, and lime juice.

Ingredients

  • Cilantro - For garnish
  • Salt - To taste
  • Sugar - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Thai chili peppers - 2, sliced
  • Kaffir lime leaves - 4 leaves
  • Galangal - 2 slices
  • Lemongrass - 2 stalks, bruised
  • Mushrooms - 8 ounces, sliced
  • Shrimp - 1/2 pound, peeled and deveined

Instructions

  1. In a pot, bring 4 cups of water to a boil.
  2. Add the lemongrass, galangal, kaffir lime leaves, and Thai chili peppers. Simmer for 5 minutes to infuse the flavors.
  3. Add the shrimp and mushrooms. Cook until the shrimp turns pink and is cooked through, about 3-4 minutes.
  4. Stir in the fish sauce, lime juice, sugar, and salt. Taste and adjust the seasoning if needed.
  5. Remove the lemongrass, galangal, kaffir lime leaves, and Thai chili peppers from the soup.
  6. Serve hot, garnished with cilantro leaves.
