Thai Tom Yum Soup

A spicy and tangy Thai soup made with lemongrass, lime leaves, chili, and shrimp.

Ingredients

  • Green onions - 2 tablespoons, chopped
  • Cilantro - 2 tablespoons, chopped
  • Sugar - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Mushrooms - 1 cup, sliced
  • Shrimp - 1/2 pound, peeled and deveined
  • Thai chili - 2, sliced
  • Galangal - 2 slices
  • Kaffir lime leaves - 4 leaves
  • Lemongrass - 2 stalks, bruised
  • Water - 4 cups

Instructions

  1. In a pot, bring the water to a boil.
  2. Add the lemongrass, kaffir lime leaves, galangal, and Thai chili. Simmer for 5 minutes to infuse the flavors.
  3. Add the shrimp and mushrooms. Cook for 3-4 minutes, or until the shrimp is cooked through.
  4. Stir in the fish sauce, lime juice, and sugar. Taste and adjust the seasoning if needed.
  5. Remove the lemongrass, kaffir lime leaves, and galangal from the soup.
  6. Serve the soup hot, garnished with chopped cilantro and green onions.
