Tom Kha Gai

This is a traditional Thai soup known for its rich and creamy coconut base, infused with the flavors of galangal, lemongrass, and kaffir lime leaves.

Ingredients

  • Cilantro - 1/4 cup, chopped
  • Lime juice - 3 tablespoons
  • Mushrooms - 1 cup, sliced
  • Thai chili peppers - 2, crushed
  • Sugar - 1 tablespoon
  • Fish sauce - 3 tablespoons
  • Kaffir lime leaves - 6
  • Lemongrass - 2 stalks, crushed
  • Galangal - 1 piece, sliced
  • Chicken breast - 2, sliced
  • Coconut milk - 2 cans

Instructions

  1. In a pot, combine coconut milk, galangal, lemongrass, and kaffir lime leaves. Bring to a boil.
  2. Add the chicken and mushrooms to the pot. Cook until the chicken is done.
  3. Season the soup with fish sauce, sugar, and Thai chili peppers.
  4. Remove from heat and add lime juice.
  5. Garnish with cilantro before serving.
