Tom Kha Gai

Tom Kha Gai is a traditional Thai soup made with coconut milk, chicken, and aromatic herbs and spices.

Ingredients

  • Salt - To taste
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Fish sauce - 2 tablespoons
  • Mushrooms - 1 cup, sliced
  • Thai chili peppers - 2, sliced
  • Kaffir lime leaves - 4 leaves
  • Lemongrass - 2 stalks, bruised
  • Galangal - 2 slices
  • Chicken broth - 2 cups
  • Coconut milk - 2 cups
  • Chicken breast - 2, boneless and skinless, sliced

Instructions

  1. In a pot, bring the chicken broth to a boil.
  2. Add the galangal, lemongrass, and kaffir lime leaves to the pot. Simmer for 10 minutes to infuse the flavors.
  3. Add the chicken slices and mushrooms to the pot. Cook until the chicken is cooked through, about 5 minutes.
  4. Stir in the coconut milk, Thai chili peppers, fish sauce, and lime juice. Simmer for another 5 minutes.
  5. Remove the galangal, lemongrass, and kaffir lime leaves from the pot.
  6. Season with salt to taste.
  7. Serve hot, garnished with chopped cilantro.
