Thyme and Olive Oil Mashed Sweet Potatoes

Ingredients

  • Milk - 1/4 cup
  • Butter - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Fresh thyme leaves - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Sweet potatoes - 2 pounds, peeled and cubed

Instructions

  1. Place the sweet potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes.
  2. Drain the sweet potatoes and return them to the pot.
