Thyme and Garlic Roasted Potatoes

These thyme and garlic roasted potatoes are crispy on the outside, tender on the inside, and packed with flavor.

Ingredients

  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Fresh thyme - 1 tablespoon, chopped
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Potatoes - 1.5 lbs, cut into small cubes

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the potatoes, olive oil, minced garlic, chopped thyme, salt, and black pepper. Toss until the potatoes are evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through cooking.
  5. Remove from the oven and let cool for a few minutes before serving.
  6. Garnish with additional fresh thyme, if desired, and serve hot.
