Thai chicken satay is a delicious and flavorful grilled chicken dish served with a peanut sauce.
Ingredients
Cilantro - 2 tablespoons, chopped
Peanuts - 1/4 cup, crushed
Sriracha sauce - 1 tablespoon
Honey - 2 tablespoons
Peanut butter - 1/4 cup
Garlic - 2 cloves, minced
Curry powder - 1 tablespoon
Lime juice - 2 tablespoons
Soy sauce - 2 tablespoons
Coconut milk - 1/2 cup
Chicken breast - 1 lb, boneless and skinless
Instructions
In a bowl, combine coconut milk, soy sauce, lime juice, curry powder, and minced garlic.
Cut the chicken breast into thin strips and add them to the marinade. Let it marinate for at least 1 hour, or overnight for better flavor.
Preheat the grill to medium-high heat.
Thread the marinated chicken strips onto skewers.
Grill the chicken skewers for about 3-4 minutes per side, or until cooked through.
In a small saucepan, combine peanut butter, honey, sriracha sauce, and a splash of water. Heat over low heat until the sauce is smooth and well combined.
