Thai Chicken Lettuce Wraps

These Thai-inspired chicken lettuce wraps are packed with flavor and make for a delicious and healthy meal.

Ingredients

  • Cilantro - 1/4 cup, chopped
  • Peanuts - 1/4 cup, chopped
  • Lettuce leaves - 8
  • Green onions - 4, chopped
  • Carrots - 2, julienned
  • Red bell pepper - 1, diced
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Chicken breast - 2, boneless and skinless, diced

Instructions

  1. In a bowl, combine the soy sauce, fish sauce, lime juice, honey, garlic, and grated ginger.
  2. Add the diced chicken to the marinade and let it sit for 10 minutes.
  3. Heat a skillet over medium-high heat and add the marinated chicken. Cook until the chicken is cooked through, about 5-7 minutes.
  4. Add the diced red bell pepper, julienned carrots, and chopped green onions to the skillet. Cook for an additional 2-3 minutes.
  5. Remove the skillet from heat and let the mixture cool slightly.
  6. To serve, spoon the chicken mixture onto lettuce leaves.
  7. Top with chopped peanuts and cilantro.
  8. Roll up the lettuce leaves and enjoy!
