Satay

Chicken satay is a popular Southeast Asian dish made with marinated and grilled chicken skewers, served with a peanut sauce.

Ingredients

  • Cilantro - 2 tablespoons, chopped
  • Peanuts - 1/4 cup, crushed
  • Skewers - 8, soaked in water
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Peanut butter - 1/4 cup
  • Coconut milk - 1/4 cup
  • Brown sugar - 1 tablespoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Chicken breast - 1 lb, cut into thin strips

Instructions

  1. In a bowl, combine the soy sauce, lime juice, minced garlic, grated ginger, brown sugar, coconut milk, and peanut butter. Mix well to make the marinade.
  2. Add the chicken strips to the marinade and toss to coat. Let it marinate for at least 1 hour, or overnight in the refrigerator.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated chicken strips onto the soaked skewers.
  5. Grill the chicken skewers for about 3-4 minutes per side, or until cooked through and slightly charred.
  6. In a small saucepan, combine the soy sauce, lime juice, honey, and a tablespoon of water. Heat over low heat until warmed through.
  7. Serve the grilled chicken satay with the peanut sauce, crushed peanuts, and chopped cilantro on the side.
