Gluten Free Asian Lettuce Wraps

These gluten-free Asian lettuce wraps are filled with flavorful ground chicken, vegetables, and a delicious sauce.

Ingredients

  • Peanuts - 2 tablespoons, chopped
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Sriracha sauce - 1 tablespoon
  • Lettuce leaves - 8-10
  • Green onions - 4, chopped
  • Carrot - 1, grated
  • Red bell pepper - 1, diced
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Gluten - free soy sauce - 2 tablespoons
  • Ground chicken - 1 pound

Instructions

  1. In a large skillet, heat the sesame oil over medium heat.
  2. Add the ground chicken and cook until browned, breaking it up with a spoon.
  3. Add the garlic, ginger, red bell pepper, carrot, and green onions. Cook for 5 minutes, until the vegetables are tender.
  4. In a small bowl, whisk together the gluten-free soy sauce, sriracha sauce, and lime juice.
  5. Pour the sauce over the chicken mixture in the skillet. Stir to combine and cook for an additional 2 minutes.
  6. Remove from heat and stir in the chopped cilantro.
  7. To serve, spoon the chicken mixture onto lettuce leaves and sprinkle with chopped peanuts.
  8. Roll up the lettuce leaves and enjoy!
