Ingredients

  • Roasted peanuts - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Cucumber - 1, thinly sliced
  • Carrots - 1 cup, shredded
  • Lettuce leaves - 8-10 leaves
  • Red chili flakes - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Lemongrass - 2 stalks, finely chopped
  • Pork tenderloin - 1 pound, thinly sliced

Instructions

  1. In a bowl, combine the lemongrass, garlic, ginger, soy sauce, fish sauce, lime juice, honey, and red chili flakes.
  2. Add the sliced pork to the marinade and let it marinate for at least 15 minutes.
  3. Heat a grill or grill pan over medium-high heat.
  4. Grill the marinated pork slices for 2-3 minutes per side, or until cooked through.
  5. Remove the pork from the grill and let it rest for a few minutes.
  6. To assemble the lettuce wraps, place a spoonful of shredded carrots and sliced cucumber on each lettuce leaf.
  7. Top with a few slices of grilled pork.
