Tembleque

Tembleque is a traditional Puerto Rican coconut pudding that is creamy, sweet, and delicious.

Ingredients

  • Salt - 1/4 teaspoon
  • Ground nutmeg - 1/4 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Sugar - 1/2 cup
  • Cornstarch - 1/2 cup
  • Coconut milk - 2 cups

Instructions

  1. In a saucepan, combine the coconut milk, cornstarch, sugar, vanilla extract, cinnamon, nutmeg, and salt.
  2. Whisk the mixture until the cornstarch is fully dissolved.
  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a gentle boil.
  4. Reduce the heat to low and continue cooking for 2-3 minutes, stirring constantly.
  5. Remove the saucepan from the heat and pour the mixture into individual serving dishes or a large mold.
  6. Allow the tembleque to cool to room temperature, then refrigerate for at least 2 hours or until set.
  7. Serve chilled and garnish with a sprinkle of cinnamon or toasted coconut flakes, if desired.
