Majarete is a traditional Puerto Rican dessert made with corn, coconut milk, and spices.
Ingredients
Ground cinnamon (for garnish) - To taste
Water - 1/4 cup
Cornstarch - 2 tablespoons
Salt - 1/4 teaspoon
Vanilla extract - 1 teaspoon
Cinnamon - 1 teaspoon
Sugar - 1/2 cup
Coconut milk - 2 cups
Corn kernels - 2 cups
Instructions
In a blender, combine the corn kernels and coconut milk. Blend until smooth.
In a saucepan, combine the corn and coconut mixture, sugar, cinnamon, vanilla extract, and salt. Cook over medium heat, stirring constantly, until the mixture thickens, about 10 minutes.
In a small bowl, mix the cornstarch and water until well combined. Add the cornstarch mixture to the saucepan and continue cooking for another 5 minutes, or until the mixture reaches a pudding-like consistency.
Remove from heat and let cool for a few minutes.
Pour the mixture into individual serving bowls or molds. Refrigerate for at least 2 hours, or until set.
Before serving, sprinkle with ground cinnamon for garnish.
