This creamy and tropical pineapple rice pudding is a delightful dessert that combines the sweetness of pineapple with the richness of rice pudding.

Ingredients

  • Chopped nuts (optional) - 2 tablespoons
  • Shredded coconut - 2 tablespoons
  • Raisins - 1/4 cup
  • Salt - 1/4 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Sugar - 1/2 cup
  • Coconut milk - 1 can (400ml)
  • Canned pineapple chunks - 1 cup
  • White rice - 1 cup

Instructions

  1. Cook the white rice according to the package instructions.
  2. In a saucepan, combine the cooked rice, canned pineapple chunks (with juice), coconut milk, sugar, vanilla extract, cinnamon, and salt.
  3. Bring the mixture to a simmer over medium heat, stirring occasionally.
  4. Reduce the heat to low and let the mixture simmer for about 20 minutes, or until the rice is tender and the pudding has thickened.
  5. Stir in the raisins and shredded coconut.
  6. Remove from heat and let the pudding cool for a few minutes.
  7. Serve warm or chilled, garnished with chopped nuts if desired.
