Tarascadas

Tarascadas are a traditional Mexican dish made with grilled meat, onions, and peppers, served on a warm tortilla.

Ingredients

  • Salsa - 1/4 cup
  • Sour cream - 1/4 cup
  • Cilantro - 1/4 cup, chopped
  • Tortillas - 8
  • Salt and pepper - To taste
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Bell peppers - 2, sliced
  • Onion - 1 large, sliced
  • Skirt steak - 1 pound

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the lime juice, cumin, chili powder, minced garlic, salt, and pepper.
  3. Place the skirt steak in a shallow dish and pour the marinade over it. Let it marinate for 10 minutes.
  4. Grill the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from the grill and let it rest for a few minutes.
  5. While the steak is resting, grill the sliced onions and bell peppers until they are slightly charred and tender.
  6. Slice the steak against the grain into thin strips.
  7. Warm the tortillas on the grill or in a skillet.
  8. To assemble the tarascadas, place a few slices of steak on a tortilla, top with grilled onions and peppers, and garnish with chopped cilantro.
  9. Serve with sour cream and salsa on the side.
