Prawn Fajitas

These delicious prawn fajitas are packed with flavor and perfect for a quick and easy weeknight dinner.

Ingredients

  • Fresh cilantro - For garnish
  • Guacamole - 1/2 cup
  • Salsa - 1/2 cup
  • Sour cream - 1/2 cup
  • Tortillas - 8, warmed
  • Salt and pepper - To taste
  • Paprika - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lime - 1, juiced
  • Garlic - 3 cloves, minced
  • Onion - 1, thinly sliced
  • Bell peppers - 2, thinly sliced
  • Prawns - 1 pound, peeled and deveined

Instructions

  1. In a bowl, combine the prawns, bell peppers, onion, garlic, lime juice, olive oil, chili powder, cumin, paprika, salt, and pepper. Mix well to coat the prawns and vegetables.
  2. Heat a large skillet over medium-high heat. Add the prawn mixture and cook for 5-6 minutes, or until the prawns are cooked through and the vegetables are tender.
  3. Warm the tortillas in a separate skillet or in the oven.
  4. Serve the prawn mixture on the warm tortillas and top with sour cream, salsa, guacamole, and fresh cilantro.
  5. Fold the tortillas over the filling and enjoy!
