Ingredients

  • White pepper - To taste
  • Salt - To taste
  • Vegetable oil - For frying
  • Sweet potato starch - 1/2 cup
  • Cornstarch - 1/2 cup
  • Sugar - 1 teaspoon
  • White pepper - 1/2 teaspoon
  • Ginger - 1 tablespoon, minced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Chicken thighs - 4, boneless and skinless

Instructions

  1. In a bowl, marinate the chicken thighs with soy sauce, minced garlic, minced ginger, white pepper, and sugar for at least 30 minutes.
  2. In another bowl, mix together the cornstarch and sweet potato starch.
  3. Heat the vegetable oil in a deep fryer or large saucepan to 350°F.
  4. Dredge the marinated chicken thighs in the starch mixture, shaking off any excess.
  5. Fry the chicken thighs in the hot oil until golden brown and crispy, about 5-7 minutes.
  6. Drain the fried chicken on paper towels and season with salt and white pepper to taste.
