Tabouli Salad

Tabouli salad is a refreshing Middle Eastern salad made with bulgur wheat, fresh herbs, and vegetables.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1/4 cup
  • Fresh mint - 1/2 cup, chopped
  • Fresh parsley - 1 cup, chopped
  • Red onion - 1/2 cup, finely chopped
  • Cucumber - 1 medium, diced
  • Tomatoes - 2 medium, diced
  • Bulgur wheat - 1 cup

Instructions

  1. Place the bulgur wheat in a bowl and cover with boiling water. Let it sit for 15 minutes, then drain any excess water.
  2. In a large mixing bowl, combine the diced tomatoes, cucumber, red onion, parsley, and mint.
  3. Add the cooked bulgur wheat to the bowl and mix well.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Refrigerate for at least 1 hour to allow the flavors to meld together.
  7. Serve chilled and enjoy!
