Tabbouleh

Tabbouleh is a refreshing Middle Eastern salad made with bulgur wheat, fresh herbs, tomatoes, cucumbers, and lemon dressing.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1/4 cup
  • Green onions - 4, thinly sliced
  • Cucumbers - 1 large, diced
  • Tomatoes - 2 medium, diced
  • Fresh mint - 1/2 cup, finely chopped
  • Fresh parsley - 1 cup, finely chopped
  • Bulgur wheat - 1 cup

Instructions

  1. Place the bulgur wheat in a bowl and cover with boiling water. Let it sit for 15 minutes, then drain well.
  2. In a large mixing bowl, combine the cooked bulgur wheat, chopped parsley, chopped mint, diced tomatoes, diced cucumbers, and sliced green onions.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the salad and toss well to combine.
  5. Refrigerate for at least 1 hour to allow the flavors to meld together.
  6. Serve chilled and enjoy!
