Swiss Chard and Sweet Potato Gratin

This delicious gratin combines the earthy flavors of Swiss chard and sweet potatoes with a creamy and cheesy sauce.

Ingredients

  • Fresh thyme - 1 tablespoon, chopped
  • Salt and pepper - To taste
  • Gruyere cheese - 1 cup, grated
  • Parmesan cheese - 1 cup, grated
  • Heavy cream - 1 cup
  • Milk - 1 cup
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, thinly sliced
  • Sweet potatoes - 2 large, peeled and thinly sliced
  • Swiss chard - 1 bunch, stems removed and leaves chopped

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat some olive oil over medium heat. Add the onion and garlic and cook until softened.
  3. Add the Swiss chard leaves and cook until wilted. Season with salt and pepper.
  4. In a greased baking dish, layer the sliced sweet potatoes, Swiss chard mixture, and grated cheeses.
  5. In a saucepan, heat the milk and heavy cream until hot but not boiling. Season with salt, pepper, and fresh thyme.
  6. Pour the hot cream mixture over the sweet potato and Swiss chard layers in the baking dish.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and continue baking for another 15 minutes, or until the top is golden and bubbly.
  9. Let the gratin cool for a few minutes before serving.
