Swiss Chard and Fennel Soup

This hearty and nutritious soup combines the flavors of Swiss chard and fennel for a delicious and comforting meal.

Ingredients

  • Lemon juice - 1 tablespoon
  • Salt and pepper - To taste
  • Dried thyme - 1 teaspoon
  • Cannellini beans - 1 can (15 oz), drained and rinsed
  • Vegetable broth - 4 cups
  • Swiss chard - 1 bunch, stems removed and leaves chopped
  • Garlic - 3 cloves, minced
  • Fennel bulb - 1 large, thinly sliced
  • Onion - 1 medium, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, fennel, and garlic. Cook until the vegetables are softened, about 5 minutes.
  3. Add the Swiss chard and cook until wilted, about 3 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes.
  5. Add the cannellini beans and dried thyme. Season with salt and pepper to taste.
  6. Simmer for another 10 minutes to allow the flavors to meld together.
  7. Stir in the lemon juice just before serving.
  8. Serve hot and enjoy!
