Swiss Chard and White Bean Stew

This hearty stew is packed with nutritious Swiss chard and creamy white beans, simmered in a flavorful broth.

Ingredients

  • Parmesan cheese - 1/4 cup, grated (for serving)
  • Salt and pepper - To taste
  • Dried thyme - 1 teaspoon
  • Tomatoes - 1 can, diced
  • Vegetable broth - 4 cups
  • Cannellini beans - 2 cans, drained and rinsed
  • Swiss chard - 1 bunch, stems removed and leaves chopped
  • Garlic - 3 cloves, minced
  • Onion - 1, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the chopped Swiss chard leaves and cook until wilted, about 3 minutes.
  4. Add the cannellini beans, vegetable broth, diced tomatoes, dried thyme, salt, and pepper. Stir well to combine.
  5. Bring the stew to a boil, then reduce the heat and simmer for 20 minutes to allow the flavors to meld together.
  6. Taste and adjust the seasoning if needed.
  7. Serve the stew hot, garnished with grated Parmesan cheese.
