Swiss Chard and Lentil Stew

This hearty and nutritious stew is made with Swiss chard, lentils, and flavorful spices.

Ingredients

  • Lemon juice - 1 tablespoon
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Vegetable broth - 4 cups
  • Lentils - 1 cup, rinsed
  • Swiss chard - 1 bunch, stems removed and leaves chopped
  • Celery - 2 stalks, diced
  • Carrots - 2 medium, diced
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the carrots, celery, Swiss chard, lentils, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil.
  4. Reduce the heat and simmer for 30 minutes, or until the lentils are tender.
  5. Stir in the lemon juice and adjust the seasoning if needed.
  6. Serve hot and enjoy!
