Sweet Corn Fritters

These crispy and delicious sweet corn fritters are made with fresh corn kernels and a flavorful batter.

Ingredients

  • Vegetable oil - For frying
  • Green onions - 2, finely chopped
  • Milk - 1/2 cup
  • Egg - 1, beaten
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Cornmeal - 1/2 cup
  • All - purpose flour - 1 cup
  • Sweet corn kernels - 2 cups

Instructions

  1. In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper.
  2. In a separate bowl, whisk together the beaten egg and milk.
  3. Add the egg mixture to the dry ingredients and stir until well combined.
  4. Fold in the sweet corn kernels and chopped green onions.
  5. Heat vegetable oil in a frying pan over medium heat.
  6. Drop spoonfuls of the batter into the hot oil and flatten slightly with the back of the spoon.
  7. Cook for 2-3 minutes on each side, or until golden brown and crispy.
  8. Remove the fritters from the pan and drain on a paper towel-lined plate.
  9. Serve the sweet corn fritters hot with your favorite dipping sauce.
