Parsnip and Sweet Corn Fritters

These parsnip and sweet corn fritters are crispy on the outside and tender on the inside, packed with flavor and perfect as a side dish or appetizer.

Ingredients

  • Vegetable oil - 2 tablespoons
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Green onions - 2, finely chopped
  • Milk - 1/4 cup
  • Egg - 1, beaten
  • Baking powder - 1 teaspoon
  • All - purpose flour - 1/2 cup
  • Sweet corn kernels - 1 cup
  • Parsnips - 2 medium, grated

Instructions

  1. In a large bowl, combine the grated parsnips, sweet corn kernels, all-purpose flour, baking powder, beaten egg, milk, green onions, salt, and black pepper. Mix well until all ingredients are evenly combined.
  2. Heat the vegetable oil in a frying pan over medium heat.
  3. Scoop about 1/4 cup of the fritter mixture and drop it into the hot oil. Flatten it slightly with a spatula. Repeat with the remaining mixture, leaving some space between each fritter.
  4. Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Remove the fritters from the pan and place them on a paper towel-lined plate to absorb any excess oil.
  6. Serve the parsnip and sweet corn fritters warm as a side dish or appetizer. They can be enjoyed on their own or with a dipping sauce of your choice.
