Crab and Corn Fritters

These crispy and flavorful crab and corn fritters are perfect as an appetizer or a light meal.

Ingredients

  • Vegetable oil - For frying
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 1/2 cup
  • Egg - 1
  • Red bell pepper - 1/2, finely chopped
  • Green onions - 2, finely chopped
  • Corn kernels - 1 cup
  • Fresh crab meat - 1 cup

Instructions

  1. In a large bowl, combine the crab meat, corn kernels, green onions, and red bell pepper.
  2. In a separate bowl, whisk together the egg, flour, baking powder, salt, and black pepper.
  3. Pour the egg mixture over the crab and corn mixture, and gently stir until well combined.
  4. Heat vegetable oil in a frying pan over medium heat.
  5. Drop spoonfuls of the fritter batter into the hot oil and flatten slightly with the back of the spoon.
  6. Cook the fritters for 2-3 minutes on each side, or until golden brown and crispy.
  7. Remove the fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
  8. Serve the crab and corn fritters hot with your favorite dipping sauce.
