Sweet and Sour Chicken Stir Fry

This delicious sweet and sour chicken stir fry is made with tender chicken, colorful vegetables, and a tangy sauce.

Ingredients

  • Sesame seeds - 1 tablespoon, for garnish
  • Green onions - 2, sliced, for garnish
  • Cooked rice - 4 cups, for serving
  • Salt and pepper - To taste
  • Vegetable oil - 2 tablespoons
  • Cornstarch - 1 tablespoon, dissolved in 2 tablespoons of water
  • Brown sugar - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Ketchup - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Onion - 1, sliced
  • Pineapple chunks - 1 cup
  • Bell peppers - 1 red and 1 green, sliced
  • Chicken breast - 2, boneless and skinless, cut into bite-sized pieces

Instructions

  1. In a small bowl, whisk together soy sauce, ketchup, rice vinegar, brown sugar, and dissolved cornstarch. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken pieces and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add bell peppers, pineapple chunks, onion, garlic, and ginger. Stir fry for 3-4 minutes, until the vegetables are crisp-tender.
  5. Return the cooked chicken to the skillet and pour the sauce over the chicken and vegetables. Stir well to coat everything in the sauce.
  6. Cook for an additional 2-3 minutes, until the sauce thickens and coats the chicken and vegetables.
  7. Season with salt and pepper to taste.
  8. Serve the sweet and sour chicken stir fry over cooked rice.
  9. Garnish with sliced green onions and sesame seeds.
