Sweet and Sour Prawn Stir Fry

This delicious sweet and sour prawn stir-fry is made with succulent prawns, colorful vegetables, and a tangy sauce.

Ingredients

  • Spring onions - 2 stalks, chopped (for garnish)
  • Salt and pepper - To taste
  • Vegetable oil - 2 tablespoons
  • Water - 1/4 cup
  • Cornstarch - 1 tablespoon
  • Brown sugar - 2 tablespoons
  • Ketchup - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Pineapple chunks - 1 cup
  • Onion - 1 medium, sliced
  • Bell peppers - 1 red and 1 green, sliced
  • Prawns - 1 pound, peeled and deveined

Instructions

  1. In a small bowl, whisk together the soy sauce, rice vinegar, ketchup, brown sugar, cornstarch, and water to make the sauce. Set aside.
  2. Heat the vegetable oil in a large pan or wok over high heat.
  3. Add the prawns and stir-fry for 2-3 minutes, until they turn pink and are cooked through. Remove from the pan and set aside.
  4. In the same pan, add the sliced bell peppers and onion. Stir-fry for 2-3 minutes, until they start to soften.
  5. Add the minced garlic and grated ginger to the pan. Stir-fry for another minute.
  6. Pour the sauce over the vegetables in the pan. Cook for 1-2 minutes, until the sauce thickens and coats the vegetables.
  7. Add the cooked prawns and pineapple chunks to the pan. Stir-fry for another minute to heat through.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped spring onions.
  10. Serve the sweet and sour prawn stir-fry over steamed rice or noodles.
