Stir Fried Bok Choy and Mushrooms

A delicious and healthy stir fry made with fresh bok choy and mushrooms.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Mushrooms - 8 ounces, sliced
  • Bok choy - 4 cups, chopped

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add garlic and ginger and cook for 1 minute until fragrant.
  3. Add mushrooms and cook for 3-4 minutes until they start to soften.
  4. Add bok choy and cook for another 2-3 minutes until wilted.
  5. Drizzle soy sauce and sesame oil over the vegetables and toss to coat evenly.
  6. Season with salt and black pepper to taste.
  7. Cook for an additional 1-2 minutes until the flavors are well combined.
  8. Remove from heat and serve hot as a side dish.
