Spinach Pesto

This vibrant and flavorful spinach pesto is a delicious twist on traditional basil pesto.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Olive oil - 1/2 cup
  • Lemon juice - 2 tablespoons
  • Pine nuts - 1/4 cup
  • Parmesan cheese - 1/2 cup, grated
  • Garlic - 2 cloves
  • Basil leaves - 1 cup, packed
  • Spinach - 4 cups, packed

Instructions

  1. In a food processor, combine the spinach, basil leaves, garlic, Parmesan cheese, pine nuts, lemon juice, salt, and black pepper.
  2. Pulse until the ingredients are well combined and the mixture has a smooth consistency.
  3. While the food processor is running, slowly drizzle in the olive oil until the pesto is well blended.
  4. Taste and adjust the seasoning if needed.
  5. Transfer the spinach pesto to a jar or container and refrigerate until ready to use.
  6. Serve the spinach pesto as a spread on bread, toss it with pasta, or use it as a sauce for grilled vegetables or chicken.
