Kale Pesto

This vibrant and nutritious kale pesto is a delicious twist on traditional pesto, packed with flavor and healthy greens.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Olive oil - 1/2 cup
  • Lemon juice - 2 tablespoons
  • Pine nuts - 1/4 cup
  • Parmesan cheese - 1/2 cup, grated
  • Garlic - 2 cloves
  • Basil leaves - 1 cup, packed
  • Kale - 4 cups, packed

Instructions

  1. Bring a pot of salted water to a boil. Add the kale and blanch for 1-2 minutes. Drain and rinse with cold water to stop the cooking process.
  2. In a food processor, combine the blanched kale, basil leaves, garlic, Parmesan cheese, pine nuts, lemon juice, salt, and black pepper. Pulse until well combined.
  3. While the food processor is running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.
  4. Taste and adjust the seasoning if needed.
  5. Transfer the kale pesto to a jar or container and refrigerate until ready to use.
  6. Serve the kale pesto with pasta, as a spread on sandwiches, or as a dip for vegetables.
