Cranberry Pesto

This cranberry pesto is a delicious twist on traditional pesto, with the added tanginess of cranberries.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Olive oil - 1/4 cup
  • Pine nuts - 1/4 cup
  • Garlic - 2 cloves
  • Parmesan cheese - 1/2 cup, grated
  • Basil leaves - 1 cup
  • Fresh cranberries - 1 cup

Instructions

  1. In a food processor, combine the cranberries, basil leaves, Parmesan cheese, garlic, pine nuts, olive oil, lemon juice, salt, and black pepper.
  2. Pulse until the ingredients are well combined and the pesto has a smooth consistency.
  3. Taste and adjust the seasoning if needed.
  4. Transfer the cranberry pesto to a jar or container and refrigerate until ready to use.
  5. Serve the cranberry pesto as a spread on crackers, bread, or as a sauce for pasta or roasted vegetables.
