Tomato Curry

This tomato curry is a flavorful and comforting dish made with ripe tomatoes, aromatic spices, and creamy coconut milk.

Ingredients

  • Vegetable oil - 2 tablespoons
  • Salt - To taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Coconut milk - 1 cup
  • Garam masala - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chilies - 2, slit
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Tomatoes - 4 large, ripe

Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Add minced garlic, grated ginger, and slit green chilies. Sauté for another minute.
  4. Add turmeric powder, coriander powder, cumin powder, red chili powder, and garam masala. Mix well.
  5. Add chopped tomatoes and cook until they become soft and mushy.
  6. Add coconut milk and salt. Stir well and let it simmer for 10-15 minutes.
  7. Garnish with fresh cilantro and serve hot with rice or naan bread.
