Spinach Channa Masala

This flavorful Indian dish combines spinach and chickpeas in a rich and aromatic tomato-based sauce.

Ingredients

  • Fresh cilantro - For garnish
  • Oil - 2 tablespoons
  • Salt - To taste
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Tomatoes - 2 medium, chopped
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 large, finely chopped
  • Chickpeas - 1 can, drained and rinsed
  • Spinach - 1 bunch, washed and chopped

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Add minced garlic and grated ginger. Sauté for a minute.
  5. Add chopped tomatoes and cook until they turn soft.
  6. Add coriander powder, turmeric powder, garam masala, red chili powder, and salt. Mix well.
  7. Add chopped spinach and cook until wilted.
  8. Add drained and rinsed chickpeas. Mix well.
  9. Cover the pan and simmer for 10-15 minutes, allowing the flavors to blend together.
  10. Garnish with fresh cilantro and serve hot with rice or naan bread.
