Spinach and Shrimp Scampi

Ingredients

  • Pasta - 8 ounces, cooked
  • Parmesan cheese - 1/4 cup, grated
  • Salt and pepper - To taste
  • Red pepper flakes - 1/2 teaspoon
  • White wine - 1/4 cup
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Butter - 4 tablespoons
  • Garlic - 4 cloves, minced
  • Spinach - 8 cups, fresh
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. In a large skillet, melt the butter and olive oil over medium heat.
  2. Add the minced garlic and red pepper flakes. Cook for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the spinach and cook until wilted, about 2-3 minutes.
  5. Add the cooked pasta to the skillet and toss to combine with the spinach.
  6. Pour in the white wine and lemon juice. Cook for an additional 2 minutes to allow the flavors to meld together.
  7. Season with salt and pepper to taste.
  8. Return the cooked shrimp to the skillet and toss everything together.
  9. Remove from heat and sprinkle with grated Parmesan cheese.
  10. Serve hot and enjoy!
