Black Bean and Quinoa Burrito

This delicious and nutritious black bean and quinoa burrito is packed with protein and flavor.

Ingredients

  • Lime - 1, juiced
  • Cilantro - 1/4 cup, chopped
  • Salsa - 1/2 cup
  • Avocado - 1, sliced
  • Tortillas - 4 large
  • Salt and pepper - To taste
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Red onion - 1/2, diced
  • Red bell pepper - 1, diced
  • Black beans - 1 can, drained and rinsed
  • Quinoa - 1 cup

Instructions

  1. Cook the quinoa according to package instructions.
  2. In a large skillet, heat some olive oil over medium heat.
  3. Add the red bell pepper, red onion, and garlic. Cook until softened, about 5 minutes.
  4. Add the cooked quinoa, black beans, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for another 5 minutes.
  5. Warm the tortillas in a separate skillet or in the microwave.
  6. Divide the quinoa and black bean mixture evenly among the tortillas.
  7. Top with sliced avocado, salsa, cilantro, and a squeeze of lime juice.
  8. Fold the sides of the tortillas over the filling, then roll them up tightly.
  9. Serve the black bean and quinoa burritos warm and enjoy!
