Ingredients

  • Salt and pepper - To taste
  • Lime - 1, juiced
  • Cilantro - 2 tablespoons, chopped
  • Sour cream - 1/4 cup
  • Avocado - 1, sliced
  • Tortillas - 2 large
  • Black beans - 1 cup, cooked
  • Cooked rice - 1 cup
  • Jalapeno - 1, seeded and diced
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, sliced
  • Bell peppers - 1 cup, sliced
  • Chorizo - 8 ounces

Instructions

  1. In a large skillet, cook the chorizo over medium heat until browned and cooked through.
  2. Remove the chorizo from the skillet and set aside.
  3. In the same skillet, add the bell peppers, onion, garlic, and jalapeno. Cook until the vegetables are tender.
  4. Add the cooked rice and black beans to the skillet. Stir to combine and heat through.
  5. Warm the tortillas in a separate skillet or in the microwave.
  6. Divide the chorizo mixture evenly among the tortillas.
