Pork and Black Bean Tacos

These delicious pork and black bean tacos are packed with flavor and perfect for a quick and easy weeknight dinner.

Ingredients

  • Salt and pepper - To taste
  • Lime - 1, juiced
  • Cilantro - 1/4 cup, chopped
  • Sour cream - 1/2 cup
  • Avocado - 1, sliced
  • Tomato - 1, diced
  • Lettuce - 1 cup, shredded
  • Tortillas - 8 small flour tortillas
  • Garlic - 2 cloves, minced
  • Onion - 1, diced
  • Olive oil - 2 tablespoons
  • Taco seasoning - 2 tablespoons
  • Black beans - 1 can, drained and rinsed
  • Pork tenderloin - 1 pound, thinly sliced

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, and cook until the onion is translucent, about 5 minutes.
  3. Add the sliced pork tenderloin to the skillet and cook until browned and cooked through, about 8-10 minutes.
  4. Add the black beans and taco seasoning to the skillet, and stir to combine. Cook for an additional 2-3 minutes.
  5. In a separate skillet, warm the tortillas over medium heat until soft and pliable.
  6. To assemble the tacos, spoon the pork and black bean mixture onto each tortilla.
  7. Top with shredded lettuce, diced tomato, sliced avocado, sour cream, and chopped cilantro.
  8. Squeeze fresh lime juice over the tacos and season with salt and pepper to taste.
  9. Serve immediately and enjoy!
