Shrimp Scampi with Parmesan

This delicious shrimp scampi is made with succulent shrimp, garlic, butter, white wine, lemon juice, and Parmesan cheese.

Ingredients

  • Cooked pasta - 8 ounces
  • Salt and pepper - To taste
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 1/2 cup, grated
  • Lemon juice - 2 tablespoons
  • White wine - 1/2 cup
  • Butter - 4 tablespoons
  • Garlic - 4 cloves, minced
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic and cook for 1-2 minutes, until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
  4. Remove the shrimp from the skillet and set aside.
  5. In the same skillet, add the white wine and lemon juice. Bring to a simmer and cook for 2-3 minutes to reduce slightly.
  6. Stir in the grated Parmesan cheese until melted and smooth.
  7. Add the cooked pasta to the skillet and toss to coat in the sauce.
  8. Return the shrimp to the skillet and toss to combine with the pasta and sauce.
  9. Season with salt and pepper to taste.
  10. Garnish with chopped parsley before serving.
