Shrimp Ramen

This delicious shrimp ramen is packed with flavor and perfect for a comforting meal.

Ingredients

  • Chili flakes - To taste
  • Sesame oil - 1 teaspoon
  • Egg - 2, boiled and sliced
  • Green onions - 2, sliced
  • Baby bok choy - 2 heads, chopped
  • Chicken broth - 4 cups
  • Soy sauce - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Vegetable oil - 1 tablespoon
  • Shrimp - 1/2 pound, peeled and deveined
  • Ramen noodles - 2 packs

Instructions

  1. Cook the ramen noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the garlic and ginger, and cook for 1 minute until fragrant.
  3. Add the shrimp to the pot and cook until pink and cooked through, about 3-4 minutes. Remove the shrimp from the pot and set aside.
  4. In the same pot, add the chicken broth and soy sauce. Bring to a boil.
  5. Add the chopped bok choy to the pot and cook for 2-3 minutes until wilted.
  6. Divide the cooked ramen noodles between two bowls. Top with the cooked shrimp, bok choy, sliced green onions, and boiled egg slices.
  7. Drizzle with sesame oil and sprinkle with chili flakes, if desired.
  8. Serve hot and enjoy!
