This refreshing fruit salad is a popular dessert in Senegal. It's made with a variety of fresh fruits and a sweet hibiscus syrup.

Ingredients

  • Papaya - 1 cup, diced
  • Banana - 1, sliced
  • Mango - 1, peeled and diced
  • Pineapple - 1 cup, diced
  • Orange - 1, peeled and segmented
  • Sugar - 1 cup
  • Water - 2 cups
  • Hibiscus flowers - 1 cup, dried

Instructions

  1. In a pot, combine the hibiscus flowers, water, and sugar. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  2. Strain the syrup and let it cool.
  3. In a large bowl, combine the orange, pineapple, mango, banana, and papaya.
  4. Pour the cooled hibiscus syrup over the fruit and toss to combine.
  5. Chill the fruit salad in the refrigerator for at least 1 hour before serving.
