Seared Diver Scallops

These seared diver scallops with a delicate crust and a tender center are simple, yet elegant.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Garlic - 2 cloves, minced
  • Unsalted butter - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Diver scallops - 12 large

Instructions

  1. Pat the scallops dry with a paper towel and season with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the scallops to the skillet and cook for 2-3 minutes on each side, until a golden crust forms and the scallops are just cooked through.
  4. Remove the scallops from the skillet and set aside.
  5. In the same skillet, melt the butter over medium heat.
  6. Add the garlic and cook for 1 minute, until fragrant.
  7. Remove the skillet from the heat and stir in the lemon juice and parsley.
  8. Return the scallops to the skillet and toss to coat in the garlic butter sauce.
  9. Serve the scallops immediately, garnished with extra parsley if desired.
