Sausage and Peppers

This delicious sausage and peppers recipe is a classic Italian dish made with sautéed bell peppers, onions, and Italian sausage.

Ingredients

  • Sub rolls - 4
  • Fresh parsley - 2 tablespoons, chopped
  • Crushed red pepper flakes - 1/2 teaspoon
  • Italian seasoning - 1 teaspoon
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 large, sliced
  • Bell peppers - 2 large, sliced
  • Italian sausage - 1 pound

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sausage and cook until browned on all sides, about 5 minutes.
  3. Remove the sausage from the skillet and set aside.
  4. In the same skillet, add the bell peppers, onion, and garlic. Sauté until the vegetables are tender, about 8-10 minutes.
  5. Slice the cooked sausage into bite-sized pieces and return to the skillet with the vegetables.
  6. Season with salt, pepper, Italian seasoning, and crushed red pepper flakes. Stir to combine.
  7. Cook for an additional 5 minutes, until the sausage is heated through and the flavors are well combined.
  8. Sprinkle with fresh parsley and remove from heat.
  9. Toast the sub rolls and fill with the sausage and pepper mixture.
  10. Serve hot and enjoy!
