Keto Sausage Stuffed Peppers

These keto-friendly sausage stuffed peppers are packed with flavor and make a delicious low-carb meal.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Shredded mozzarella cheese - 1/2 cup
  • Salt and pepper - To taste
  • Italian seasoning - 1 teaspoon
  • Tomato sauce - 1/2 cup
  • Cauliflower rice - 1 cup
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, diced
  • Ground sausage - 1 pound
  • Bell peppers - 4 large

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, cook the ground sausage over medium heat until browned. Remove from the skillet and set aside.
  4. In the same skillet, sauté the diced onion and minced garlic until softened.
  5. Add the cauliflower rice to the skillet and cook for 2-3 minutes, until slightly tender.
  6. Stir in the cooked sausage, tomato sauce, Italian seasoning, salt, and pepper. Cook for another 2-3 minutes.
  7. Fill each bell pepper with the sausage mixture and place them in a baking dish.
  8. Bake for 20 minutes, or until the peppers are tender.
  9. Remove from the oven and sprinkle the shredded mozzarella cheese on top of each pepper.
  10. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  11. Garnish with fresh parsley before serving.
