Zucchini and Cheese Stuffed Peppers

These delicious stuffed peppers are filled with zucchini, cheese, and flavorful spices.

Ingredients

  • Fresh basil - 2 tablespoons, chopped
  • Parmesan cheese - 1/2 cup, grated
  • Mozzarella cheese - 1 cup, shredded
  • Salt and pepper - To taste
  • Italian seasoning - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Zucchini - 2 medium, grated
  • Bell peppers - 6

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  5. Add the grated zucchini, Italian seasoning, salt, and pepper. Cook for 5 minutes, or until the zucchini is tender.
  6. Remove the skillet from heat and let it cool slightly.
  7. Stir in the shredded mozzarella cheese, grated Parmesan cheese, and chopped fresh basil.
  8. Stuff the bell peppers with the zucchini and cheese mixture.
  9. Place the stuffed peppers in a baking dish and cover with foil.
  10. Bake for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  11. Serve hot and enjoy!
